Indian Chinese cuisine
Chow mein is also common in Indian Chinese, Bangladeshi Chinese, cuisine. In India, it was introduced by the Chinese of Calcutta. It is usually offered Hakka or with gravy. Catering to vegetarian diets, there is an Indian variant, vegetable chow mein, which consists of noodles with cabbage, bamboo shoots, pea pods, green peppers, and carrots. In the New Delhi area, chow mein can sometimes include paneer with the mixture of noodles and vegetables. Another non-meat Indian variant includes scrambled egg as a protein source. has its own variant that is called Calcutta Chow Mein or Calcutta Chowmin that also includes green chilli, chilli garlic, or hot garlic.
What Is ChowMein:-
Chow Mein is a Chinese stir-fried noodles dish that is made both with and without meat. Chow means stir-fried and Mein means noodles. It's very popular in India and a lot of other countries too, and most of them have a local version of this delicious noodle dish.

Ingredients For Making Chow-Mein/Noodles
For Boiling Noodles (नूडल्स उबालने के लिए) 2 packs Noodles (नूडल्स) 2½ liter Water (पानी) 2 tbsp. Salt (नमक) 2 tbsp. Oil (तेल)
For Chow Mein/Noodles Making(चाऊमीन/नूडल्स बनाने के लिए)
3½ tbsp. Oil (तेल)
2 medium Onions – sliced (प्याज़)
5-6 cloves Garlic – chopped (लहसुन)
2 fresh Green Chilies – chopped (हरी मिर्च)
1 inch Ginger – chopped (अदरक)
1 medium Capsicum – julienned (शिमला मिर्च)
2 medium Carrot – julienned(गाजर)
½ medium Cabbage – shredded (पत्ता गोभी)
Boiled Noodles (उबले हुए नूडल्स)
½ tsp Red Chili Sauce (रेड चिली सॉस)
¼ tsp Soya Sauce (सोया सॉस)
Spring Onions (प्याज़ पत्ता)
For Sauces Mixture (सॉस मिश्रण के लिए)
1 tbsp. Vinegar (सिरका)
1 tbsp. Red Chili Sauce (रेड चिली सॉस)
1 tbsp. Green Chili Sauce (ग्रीन चिली सॉस)
1 tbsp. Soya Sauce (सोया सॉस)
1 tbsp. Tomato Ketchup (टमाटर केचप)
½ tbsp. Schezwan sauce (शेज़वान सॉस)
For Powdered Spices (पाउडर मसाले के लिए)
½ tsp Black Pepper Powder (काली मिर्च पाउडर)
¼ tsp Degi Red Chili Powder (देगी लाल मिर्च पाउडर)
Salt to taste (नमक स्वादानुसार)
¼ tbsp. Chili Flakes (मिर्च फ्लेक) (Optional)
For Garnishing (नूडल्स गार्निशिंग के लिए)
Spring Onions (प्याज़ पत्ता)
Shredded Cabbage (कुछ कटी हुई गोभी)
Shredded Capsicum (कटी हुई शिमला मिर्च)
Process (प्रोसेस)
For Boiling Noodles (नूडल्स उबालने के लिए)
In a large pot heat water, then add salt(To Taste) and bring it to a rolling boil then add the raw noodles and let them cook.
Once cooked remove in a strainer and apply oil and keep aside for Making Noodles/Chow-Mein.
For Sauces Mixture (सॉस मिश्रण के लिए)
In a bowl add vinegar, red chili sauce, green chili sauce, soya sauce, Tomato Ketchup, Schezwan sauce
Mix everything properly and keep aside for Making Noodles/Chow-Mein.
For Powdered Spices (पाउडर मसाले के लिए)
In a bowl add Black Pepper Powder, degi red chili powder, salt, Chili Flakes
Mix everything then keep aside for Making Noodles/Chow-Mein.
For Chow Mein/Noodles Making (चाउमीन/नूडल्स बनाने के लिए)
In a pan heat oil and add , ginger, garlic, green chilies sauté for a few seconds till they become fragrant.
Now add carrot sauté for a few minute till they soft and crisp, then add red bell pepper, capsicum, cabbage, onion and sauté for a minute on high heat Stir fry for around 2-3 minutes or till vegetables are cooked but crunchy.
Then add boiled noodles and
Prepared sauces mixture, and spices mixture, add ½ tbsp. red chili sauce, ½ tbsp. soya sauce and toss it properly until well mixed.
Continue cooking for a minute then switch off the flames and add spring onions.
Serving immediately and garnish it with spring onion, cabbage and some capsicum and serve hot.
Notes:- Regarding To ChowMein/Noodles (चाउमीन/नूडल्स के संबंध में नोट्स)
Don’t overcook the noodles, take them out of the boiling water 1-2 minutes before they are completely cooked. Rinse with cold water, apply oil, and keep aside till you stir fry the vegetables. Applying oil will help to prevent the noodle strands to stick to each other.
Always use a large utensil to make chow-Mein/Noodles.
Stir fry the vegetables and noodles on a high flame so that they remain crunchy.
Chow-Mein/Noodles is cooked on a high flame so keep everything ready before you start making it. Chop the vegetables, boil noodles, and mix sauces with vinegar and pepper in a bowl. Once you start the stir-frying process everything will get cooked within a few minutes.
