Chole bhature (Hindi: छोले भटूरे) is a food dish originating from northern India. It is a combination of chana masala (spicy white chickpeas) and bhatura/Puri, a fried bread made from Maida. Although it is known as a typical Punjabi dish, there are varied claims around the origin of dish.




What Is Chole Bhature?

Chole bhature (Hindi: छोले भटूरे) is a food dish originating from northern India. The dish is also very popular in Punjab as a breakfast meal.[2] It is a combination of chana masala (spicy white chickpeas) and bhatura/Puri, a fried bread made from Maida. Although it is known as a typical Punjabi dish,[4] there are varied claims around the origin of dish.

Chhole bhature is often eaten as a breakfast dish, sometimes accompanied with lassi. It can also be street food or a complete meal and may be accompanied with onions, pickled carrots, green chutney or achaar.



What goes with chole bhature?

The delicious chickpea curry can be also had with poori, Naan or Kulcha or Aloo Kulcha or aloo paratha. They taste equally good with bread or pav (dinner rolls). The chickpeas have to be cooked really well. They should not be just cooked or al dente, the way they are served in many restaurants.

Ingredients For Making Chole Bhature

For Chole

  1. 1 cups regular chickpeas- soaked overnight, drained, rinsed.

  2. 1 tbsp coriander powder/dhania powder

  3. 1tsp red chilli powder/lalmirch powder

  4. ¼ tsp turmeric powder/haldi

  5. 1 tspchole masala powder or garam masala powder

  6. 1 tsp dry mango powder/amchur powder

  7. a pinch of asafoetida/hing (optional)

  8. black salt or rock salt as required

  9. 2 cups water to be added later


wholegaram masala/spices for Making Chole Bhature

  1. 1 tsp cumin seeds/jeera

  2. 1 large indian bay leaf/tejpatta

  3. 2 inch cinnamon/dal chini

  4. 2­-3 cloves/lavang

  5. 2 green cardamom/chotielachi

  6. 2 black peppercorn


Ground paste ingredients

  1. 1 medium size onion, chopped

  2. 2 medium size tomatoes, chopped

  3. ½ inch ginger/adrak, chopped

  4. 3­4 garlic cloves/lahsun, chopped

For Bhatura

  1. 2 cups, Refined flour/ Maida

  2. 1 tbsp Semolina/ sooji

  3. 4 tbsp Curd/ yogurt

  4. 1 tbsp Oil

  5. Salt to taste

  6. ½ tsp Sugar

  7. ¼ tsp Baking powder

  8. Water to knead into a dough

  9. Oil – for deep frying


Process For Making Chole Bhature

For Chole

  1. Pressure cook, the soaked chole for 4-5 whistles, cool and strain.

  2. Heat oil in a pan or kadai fry the whole garam masala/spices mentioned above till the oil becomes fragrant. Add the ground paste and saute till the oil starts to leaves the sides of the paste.

  3. Keep on stiring, so that the paste does not stick to the pan.

  4. Add all the dry spice powders ­ turmeric, red chili powder, coriander and dry mango powder stir and saute for a minute. Add the cooked chole, water, salt and stir.

  5. Simmer on a low or medium flame for 12­15 minutes till the curry thickens. Stir occasionally.

  6. Add slit green chilies and garam masala powder or chole masala. stir and simmer for a minute or two.

  7. Serve chole hot with onion slices, lemon wedges along with bhatura.


For Bhature

  1. Mix all the mentioned ingredients to make a soft dough. The dough should not be too hard or too soft on touch.

  2. Cover with a wet cloth and keep aside for at least 3 to 4 hrs.

  3. Portion the dough into small balls and roll into thick round shaped rotis. It shold not be too thick or too thin.

  4. Heat enough oil for deep frying in a heavy bottomed vessel. Once the oil is hot, reduce flame to medium high.

  5. Now slide the batura into the hot oil. Using the back of the ladle, immerse completely in oil you will find it will puff. Flip over and fry the other side till light golden brown. Remove on to absorbant paper.

  6. Serve hot with chole.
