2) How do I thicken chutney?
Answer :- If your chutney is too runny or your recipe calls for a thickening agent, always use cornflour mixed with a little of the vinegar. Cornflour is gluten free. Always to this at the very end because thickening your chutney like this will make catch and burn easily.
3) Does chutney thicken on cooling?
Answer :- Reduce your temperature and cook for longer. Towards the end you will have to watch the consistency and stir the bottom of the pan a lot so that it doesn't stick and/or burn. Never let it cool and reheat, that will definitely burn...my experience.

For Making Green Chutney
2 cup coriander leaves
1 cup mint leaves / pudina
3 inch ginger
3-4 green chilli
6-7 tbsp water
2 tbsp lemon juice
1tsp Curd
1 Tbsp Ground nut
For Masala
1 tsp cumin powder / jeera powder
1 tsp sugar
salt (Salt As taste)
pinch of hing
Instruction For Making Green Chutney
Process For Making Green Chutney
Firstly, in a blender take 1 cup coriander leaves and ½ cup mint leaves.
Also add 3 inch ginger and 3 green chilli.
Additionally add ½ tsp cumin powder, ½ tsp sugar, ½ tsp salt and pinch of hing.
Blend smooth adding 7-8 tbsp water.
Transfer to a cup and mix 1 tbsp lemon juice.
Finally, green chutney is ready for serve
Serve it with Chaat Or sandwich.
