Ingredients For Pav Bhaji

To boil vegetables

  1. 200 gms Cauliflower florets

  2. 1 cup Carrot, Peeled, cubes

  3. 1 capsicum, chopped

  4. 1 cup Green Peas

  5. Salt to taste

  6. 3 Medium Potatoes, boiled & peeled

For Bhaji

  1. 1 tbsp Oil

  2. 100 gms Butter (add gradually)

  3. 1 tsp Cumin Seeds

  4. 1 tbsp Ginger Garlic paste

  5. 2 Medium Onions, finely chopped

  6. 4 Large Tomatoes, finely chopped

  7. 3 Medium Potatoes, boiled & peeled

  8. 1 tbsp Kashmiri Red Chili powder

  9. 1 tsp Turmeric Powder

  10. 3 tbsp Pav Bhaji Masala

  11. Salt to taste

  12. 1 no lime juice

  13. 3 tbsp Fresh Coriander, chopped

For Pav

  1. 2 tbsp Butter

  2. ½ tsp Pav Bhaji Masala

  3. 10-15 Pavs

For Serving

  1. 1 Large Onion, finely chopped

  2. 1 Lemon, cut into quarters

  3. 1 tbsp Butter

Process For Making Pav Bhaji

For Boiled Vegetables

  1. Add cauliflower, carrots, green peas and capsicum in pressure cooker.

  2. Now add water just to cover the vegetables.

  3. Give 5 whistles.

  4. Make sure vegetables gets mushy & porridge kind of texture.

  5. Add cooked potatoes and mash well.

For Bhaji

  1. On a large tawa or kadhai heat oil and butter on medium flame.

  2. Add onions and saute for a minute.

  3. Add ginger garlic paste and saute till onion is golden in colour.

  4. Add in tomatoes and cook for 3-4 mins while stirring continuously.

  5. Add little amount of butter, mix well and cook for 3-4 minutes.

  6. Add potatoes and mash them along with boiled vegetables using a potato masher.

  7. Add kashmiri red chilli to the bhaji and mix well.

  8. Add water little by little for that perfect consistency.

  9. Add turmeric powder and mix well. Add some more butter and mix well.

  10. Add pav bhaji masala in two parts, half while cooking and half when the bhaji is cooked.

  11. Add the cooked and mashed vegetables and mix well.

  12. Add butter and salt, mix well.

  13. Add some more water and cook for 5-6 minutes.

  14. Finish with lime juice & chopped fresh coriander leaves.

For Pav

  1. Heat a tbsp of butter and add little red chili powder on a tawa.

  2. Dab 4-5 pavs at a time and toast them as desired. Repeat till all the pavs are toasted.

For Serving

  1. Portion out bhaji on plate and put a dollop of butter on top. Place onion and lemon on side.

  2. Garnish with fresh coriander and serve along with pav.

NOTE

  1. You also, add more vegetables of your choice to make it more nutritious.

  2. You can cook potatoes along with the other vegetables to instead of cooking separately.

  3. You can reduce the quantity of butter as per your preference.
